Gluten Free Blueberry Muffins Recipe That’s So Easy, Make Sure To Get The Kids Involved To Help!




Last year when my neighbor’s son was diagnosed with Celiac disease, there was a great depression that settled on their household. They had always been fans of baking, bringing in the whole family and getting the kids involved in the time of action was part of their fun. It wasn’t just a way to make food, it was a way for the whole family to get involved in a project. And afterward there was always the reward of eating great food that followed.

I set out on a mission to find Gluten Free recipes that not only tasted like the real thing, but were equally as easy to make and took the same amount of time.

This is one of my better ones, A light tender muffin with fresh blueberries.

elements:

1 cup rice flour

1/2 cup potato starch

1/2 cup tapioca flour

1/4 cup arrowroot flour

1 1/4 tsp xanthan gum

1 Tbsp baking powder

1/2 cup sugar

1 tsp salt

2 eggs, beaten

3/4 cup milk

1/4 cup melted butter

1 Tbsp vinegar

1 cup blueberries (fresh or frozen)

2 Tbsp sugar

Directions:

Thoroughly mix the baking powder, sugar, salt, rice flour, potato starch, tapioca flour, arrowroot flour and xanthan gum together.

Mix in the eggs, milk, melted butter and vinegar. Stir until they just begin to blend.

Finally, add the blueberries and stir in just until mixed.

Lightly grease muffin tins or use paper liners before you fill them with batter. Be sure to sprinkle a bit of sugar on top! 

Now your ready to bake, and that’s all!
